ESPRESSO BROWNIE BLONDIES

Brownies, blondies, espresso and chocolate?!? Who do I think I am making a recipe this luxurious. Seriously IN LOVE with her.

These were perfect when my sweet tooth came creeping in. These soft brownies are exactly what you need to satisfy a choccy craving. Also they couldn’t be more simple to whip up, check out the recipe for yourself.

Ingredients:

BROWNIE:

1/2 cup of unsalted butter

1 cup of sugar

1 tbsp of instant coffee

2 eggs

2/3 cup of all purpose flour

1/2 cup of cocoa

1/2 tsp baking powder

BLONDIE 1/4 cup of unsalted butter

1/2 cup of sugar

1 tsp of vanilla

1 tsp of instant coffee

1 eggs

2/3 cup of all purpose flour

1/2 tsp baking powder

ADDITIONAL Chocolate chips, used to add final chocolate drizzle

Method

  1. Preheat your oven to 350F and line an 8x8 brownie pan with parchment paper

  2. Brownie: Mix together the butter (melted in microwave), sugar and coffee. Then whisk in 1 egg at a time into mixture. Add the flour, cocoa, baking powder and mix until combine. Pour the batter into the tray.

  3. Blondies: Mix together the butter (melted in microwave), sugar, vanilla and coffee. Then whisk in the egg into mixture. Add the flour, baking powder and mix until combine. Pour the batter into the tray over the brownie batter

  4. Using a knife make swirls in the batter to make a pretty pattern and then bake in the oven for 25-30 minutes. If you insert a tooth pick in the center if should partially come out with a little bit of the batter but it shouldn't be absolutely covered in batter.

  5. Optional: melt some chocolate chips and add a drizzle over the top to add an extra layer of deliciousness

:)
