FUDGE SWEET POTATO BROWNIES

Once you add sweet potato to your brownies you won’t go back. I swear the sweet potato brings a fudge level and caramel element that is unmatched. Top tip bake your sweet potato until caramelized to bring an extra golden flavour.


Ingredients:

1 egg

1/3 cup of almond butter

2 tbsp maple syrup

1/4 cup of sugar

1/2 cup of sweet potato purée / mash

1 tsp vanilla

1/2 cup oat flour

1/4 cup of almond flour

1/3 cup of cocoa

1/2 tsp baking powder

3 tbsp almond milk


Method:

1. Prep your sweet potato, bake until soft and then mash until a purée is formed

2. Preheat your oven to 180C / 350F and line a loaf tray

3. Whisk together your egg, almond butter, maple syrup, sweet potato and vanilla

4. To the wet ingredients evenly fold in the oat flour, almond flour, cocoa, and baking powder

5. Add your almond milk to make the batter thinner and then add to your loaf tray

6. Add any of your fav toppings (I used chocolate chips and nuts)

7. Bake for 20-25 mins, make sure to test with a toothpick :)
