HERBIE MEATBALLS

Me cooking with red meat? that's new... balance is key. I am all about adding to y diet and diversifying my foods to help regrow my gut health. Adding just a little red meat into my diet is a great way to to increase my natural vitamins threw food, including Iron, vitamin D, Vitamin B, Zinc and Selenium.



Ingredients:


- 1 thick piece of sourdough, toasted and crumbed

- 2 garlic clove

- 1 medium/ small red onion roughly chopped

- 1 egg

- a pinch of salt and pepper

- 1 bunch of your choice of herbs ( I used 1/2 dill and 1/2 parsley)

- 500g of minced beef


Method:

  1. Start by crumbing your piece of sourdough using a food processor and set aside

  2. Put the onion and garlic into the food processor and blend until finely chopped

  3. Add the herbs, salt and pepper and blitz

  4. Add the egg to the processor and blitz just to mix

  5. In a large bowl add the food processor mix, ground beef and bread crumbs

  6. Cook either in a frying pan over medium-high heat with a little olive oil or in the oven/ air fryer. In the air-fryer it should only take 8 mins at 200C


I served my herbie meatballs up with fresh baba ganoush, a wrap, and fresh cucumber & baby tomatoes :)
