LEMON BLUEBERRY COOKIEs

I will forever be in love with this flavor combo. These soft scrumptious cookies are the perfect baked good to serve at a morning tea or to impress your loved ones. Soft, dreamy and packed with a lemony punch. Seriously outdid myself with this one.



Ingredients:

2 cups flour +1 tbsp (for blubs)

2 tbsp of corn starch

1/2 tsp of baking soda

1/2 tsp of baking powder

1/2 cup softened butter

1/2 cup caster sugar

a large egg

3tbsp fresh Lemons juice

zest from 1 lemon

1/2 tsp of Lemon/ vanilla extract

1 cup of blueberries, fresh or frozen



Method:

1. Preheat your oven to 350F, and line baking trays with parchment paper

2. Cream together butter and sugar until light and fluffy

3. Then beat in eggs, lemon juice, zest and extract

4. Mix your dry ingredients together and add to the wet, try and prevent over mixing

5. Cover the blueberries in 1 tbsp of flour and then fold in blueberries

6. Scoop 2 tbsp of the batter, roll into a ball, flatten and place on lined tray. Make sure you leave enough room for the cookies to spreading

7. Bake for 12 minutes and allow to cool

8. ADDITIONAL DRIZZLE: When cooled, mix together lemon juice and icing sugar to form a glaze, drizzle over cookies and serve up :)
