LEMON POPPYSEED & LAVENDER MUFFINS

All the high tea vibes with these ones! I have been on the BIGGEST lavender kick since my mama bought me a bundle of dried lavender. It has been incredible in all my baked goodies and is delish in my coffee. Combining the lavender with lemon poppyseed is elite.



These muffin are perfect for a healthy mid-day work snack. This recipe makes 6 perfect muffins...so if your'e baking for yourself this recipe is calling your name.



Ingredients:

1 egg

2 tbsp of melted dairy free butter

Zest from 1 small lemon

2 tbsp of lemon juice

3 tbsp of maple syrup

1/3 cup of greek yogurt

1 cup of oat flour

1 tsp of baking powder

1 tbsp of poppyseeds

1 tsp of dried lavender (or lavender essence can be subbed for 1/2 tsp)


Method:

1. Whisk together egg, butter, lemon juice and zest, maple syrup and greek yogurt

2. In a separate bowl combine the oat flour, baking powder

3. Stir the dry ingredients through the wet ingredients

4. Add the poppyseeds and the lavender and mix

5. Scoop the mixture to cupcake liners, make 6 perfect ones and bake at 350F for 12ish minutes


Icing: Mixture of greek yogurt, confectionary sugar, and lemon zest + juice
