This tomato based Mahi Mahi Orzo dish will make for the perfect dinner for two. The mahi fillets are partnered perfect with a flavorful wine based orzo.
Ingredients
2 Mahi Mahi fillets
Mahi seasoning: garlic powder, paprika, pepper, chilli powder, oregano
1 tbsp of olive oil
1 tbsp of plant-based butter
2 cloves of garlic
1/2 cup of orzo
1/2 cup of white wine, Sauvignon Blanc is a great option
2 cups of veggie broth
1 cups of halves cherry tomatoes
Juice from a lemon
freshly cracked pepper
1 tsp of dried oregano
Method:
Season the fillets with garlic powder, paprika, pepper, chili powder and oregano. I tend to eye ball the seasoning instead of going with precise measurements here
Heat up the olive oil in a large pot on medium-high heat and then add your Mahi fillets. Cook on eat side for 1-2 minutes (try not to overcook the fillets). Move the fish to a plate and cover with Aluminum foil to keep warm.
Add the butter to the same pot which cooked the mahi. Add the orzo and stir until golden, roughly 2 minutes.
Add the white and cook for a minute. Then add in the veggie broth, tomatoes, oregano and 1/2 the lemon juice to the pot.
Bring the orzo to a boil and then reduce to a simmer. Cover the pot and cook for around 15 minutes to allow the orzo to soak up all the liquid.
Place the Mahi fillets on top of the orzo, add the remainder if the lemon juice and then cover for another 5-10 minutes.
