my goodness meee, these are the perfect decidant dessert for all my cheesecake and coffee lovers. This recipe has all my coffee loving friends drooling.
This recipe makes for 12 mini cheesecakes.
Ingredients: BASE: - 1/2 cup of almond meal
- 1/2 cup of oat flour
- 4 tbsp of melted coconut oil
CHEESECAKE:
- 1/4 cup of chocolate
- 2 tbsp of milk
- 150g of cream cheese (lite if preferred)
- 1/4 cup of greek yogurt
- 2-3 tbsp of sugar/ sweetener
- 1 tbsp of instant coffee
- 1 lightly whisked egg
Method;
1. Preheat your oven to 160C / 325 F and line 12 cupcake tray
2. Form crust by melting your coconut oil and then mixing in the almond meal and oat flour until a crumble forms. Evenly spread between the 12 cheesecakes and push down until even and flat. (TIP: I used the base of a shot glass and it worked perfect)
3. Melt together your chocolate, milk and instant coffee. This can be done either over a stove top or very carefully in the microwave. Allow to cool
4. Whilst the chocolate mix is cooling, using an electric whisk beat your cream cheese until creamy and soft. Add in the egg, greek yogurt and sugar and lightly beat until combine (try not to over mix)
5. Once the chocolate mix has cooled add it to the cream cheese mix and beat until combine
6. Dispense the filling evenly between the 12 mini cheesecakes
7. Bake for 12 minutes, the middle will have a slight jiggle when you remove them
8. Allow to cool and enjoy :)
