MINT & MANGO side salad

the summer salad you need at your next fam function. She’s fresh and energetic...and an absolute cracker of a side for fresh seafood or bbq chicken.



INGREDIENTS

- 1/2 cup of chopped mint

- 2 peaches cubbed

- 1 cup of cherry tomatoes chopped

- 2 cups of fresh cucumber chopped

- 1/2 a red onion finely chopped

- 1 avo chopped into chunks


DRESSING:

- 1/2 cup of mint

- juice from 2 lemons

- 2 tbsp of olive oil

- 2 cloves of minced garlic

- 1 tsp of dijon mustard

- 2 tbsp of honey

- s&p


METHOD: 1. Chop up all your fresh salad ingredients and add to a medium salad bowl

2. Blend together all the dressing ingredients and pour over the salad

3. Stir and serve up with your fav protein
