Do I have a recipe for youuuu! If you're a lover of peanut butter (like myself) and are in need of a healthier sweet, this one is a must try! These gourmet chocolate and peanut butter rice crispie treats make for the best post lunch sweet treat.
Ingredients:
1/2 cup of peanut butter
2 tbsp of coconut oil
1/2 tsp of vanilla
1/4 cup of maple syrup
1/2 cup of vanilla protein powder
2 & 1/2 cups of rice pops
1/3 cup of chocolate
Method:
Bring the pb, coconut oil, vanilla and maple syrup to a simmer over low heat for 1 minute mixing constantly until throughout combine
Remove the mixture from heat and mix in the protein powder
Fold in the rice pops
Scoop all the batter into a lined 20x20cm (8x8inch) pan and evenly spread and compact down.
Place in the fridge for at least 15 minutes before adding chocolate. Melt your choice of chocolate and evenly spread the layer over the base
Refrigerate for 30 minutes, then chop into 16 pieces and dig in :)
TIP: if you dont want to use a pot you can microwave the ingredients from step one instead
