nothing screams fall as much as these PUMKIN CHAI COOKIEs. What a perfect way to kick off my fall/autumn baking. Also October means pumpkin right!?
If you’re like me and addoorreee chai, these little bites will fill your autumn sweet tooth cravings. Perfectly soft and fluffy.
Ingredients:
DRY:
2 cups of all purpose flour
1 tsp of baking powder
a good crack of salt
1/2 tsp of nutmeg
1 twinnings chai tea bag
WET:
I stick of softened butter
3/4 cup of granulated sugar
1 tsp of vanilla
1 egg
1/2 cup of canned pumpkin puree
SUGAR: 1/4 c of sugar, 2 tsp of cinnamon, 1/2 tsp nutmeg, 1/4 ginger, 1/4 tsp allspice
Directions:
1. Preheat your oven to 350F, and prepare 2 baking trays lined with baking paper
2. Mix all the dry ingredients together in a separate bowl, set aside
3. Mix the 'SUGAR' ingredients together and set aside
4. Beat together the butter and sugar until nice and creamy and pale in colour
5. Then beat inn your eggs one at a time, and mix inn your vanilla and pumpkin
6. Add your wet ingredients to your dry and fold until thoroughly combined
7. Scoop a tablespoon of the mixture , roll into a ball and then roll in the "SUGAR" until fully coated
8, Place the balls on the baking tray and slightly squish them down.
9. Bake for approximately 20 minutes and then ENJOY :)
