Okay okay these might sound funky dunk, but trust me they are fudgy, rich and will become your new fav healthified baked good
On my SIBO diet we eliminated all sources of gluten so I found ways to be creative to cure my cravings :) This recipe uses pantry staples and is quick to prep.
QUINOA is packed with awesome nutrients such as magnesium, iron, fiber, B vitamins and even has some sneaky protein. It is an awesome alternative to rice and is completely gluten free unlike most grains.
2 cups of cooked quinoa
1/3 cup of cocoa
1/3 of sugar/ stevia/ sweetener
2 eggs
1/2 cup of almond milk (any milk)
1/3 cup of melted coconut oil
1 tsp baking powder
1. Preheat your oven to 180C/ 350F , line a 20x20cm brownie pan
2. Blend all ingredients together until the quinoa is no longer lumpy, I used an emulsion blender for this
3. Add batter to your pan and bake for 25-30 mins until a toothpick comes out clean
