A perfect recipe for when you are craving fresh pesto speedy quick. Pesto is a fridge staple and can take almost any meal to the next level. Think pastas, salads, roasted veg, meat. Seriously so ideal to have a batch stored in the fridge.
Here’s my go-to small batch Vegan pesto :
- 1/4 cup mixed nuts
- 1 tbsp nutritional yeast
- 2 -3 cups of fresh basil
- 2 cloves of freshly minced garlic
- 1 tbsp lemon juice
- 2 tbsp of olive oil
- s&p to taste
simply blend everything up together and then enjoy. Pesto if best when fresh but can also be kept in the freezer as a back up :)
